White Bean Salad
This tasty dish is pretty simple to prepare,and you can always omit the cheese if vegan, this has plenty of
protein already, and tastes great warm or chilled.
* 2 cans of drained white beans
* 2 large, diced tomatoes
* juice of half a lemon
* 2 tablespoons of red wine vinegar or balsamic vinaigrette
* 2 minced cloves of garlic -
* 2 ½ tablespoons of olive oil -
* 1 finely chopped red onion
* ½ cup of shredded mozzarella (or grated Parmesan)
* 1 teaspoon of dried oregano
This is so quick, it hardly counts as cooking... place your beans, purple onion, oregano, garlic, and
olive oil in a pan over low heat for about 60 seconds. Then, take your other ingredients and mix them in, making
sure to thoroughly toss the salad.
Season to taste with pepper and salt, and if you intend to eat it cold remember to adjust the seasoning
accordingly - they will need to be more intense.
